Homemade Popsicles
I have been looking for popsicle molds every time I go to the grocery store and I finally found them! Which meant of course that I had to make up a recipe as soon as I had them home and washed!
Here is the recipe that can easily be subbed out with whatever fruit you have on hand!
- One bag frozen strawberries from Sam’s Club
- Vanilla Oikos Greek Yogurt
In a blender or food processor blend the strawberries until they are puréed.
Pour the strawberries into the popsicle mold until they are 1/3 filled.
Scoop three spoonfuls of yogurt into the molds then continue filling with the strawberries the rest of the way.
Freeze overnight and ENJOY!
Easy Muffin Recipe
For so long I have been wanting to start creating and posting more of my own recipes on here and today is the day! I made these muffins from scratch, making up the recipe as I went; writing ingredients down on a paper towel.
This recipe takes so little time and not a lot of ingredients so go ahead and make them! If you like your muffins a little more moist, I would suggest adding more agave syrup or a little more peanut butter. These muffins are both toddler and hubby approved!
All you need to do is mix all ingredients, spoon into cupcake tin filling to the top of each cup.
Bake at 350 degrees for 15-17 minutes. Take out and place on cooling rack, dive in and enjoy!
Instant Pot Carnitas
I was trying to come up with a recipe to feed 10 people and this creation came about. I have been loving my Instant Pot and have begun testing out recipes I make up. This is by FAR the best one that everyone enjoyed!
If you prefer your meat soft instead of a little crispy skip the steps on the stove and in oven!
Breakfast Burrito Recipe
When you start out with a little one; it is easy to often forget that you need to eat as well! Here is the simplest recipe that I used the first few months to make sure that my husband was fed and it was not a lot of clean up as neither of us wanted to spend much time in the kitchen.

Simple and Delicious Ways to Feed Your Small Gathering this Year for Thanksgiving
November and December are usually the months when I start thinking of holiday plans. It is when we plan for whichever holiday we have to spend out of state with my husbands side of the family.
Before having a child it was stressful with travel and rushing around to see everyone in a few days time, but after the birth of our son it became complicated on a whole new level.
Someone is always feeling left out when we travel and it means our babe misses a holiday with half his family every time.
Last year we travelled for Christmas and this year it was supposed to be for Thanksgiving. On one hand we are sad we miss a holiday with his family but on the other hand we are just doing our best to keep everyone safe.
So I wanted to share some tips and tricks I’ll be using this year to help prepare Thanksgiving dinner for a small gathering. If everyone would have come for our normal dinner we would have over 15 including children.
So this year we are scaling things back! Here are my top five tips for you!
- Figure out how many people you are gathering with and decide how much food they will eat or how many leftovers will be used. So instead of making a huge amount of food or whatever your “normal” was, if people in your group do not really enjoy leftovers, why spend all the extra time making them?
- Base what you are serving around what you like and enjoy! If you always make a dish or two that no one eats, or that you make simply because you feel like you HAVE to, this is the year to break out of that mold! You get to decide! If everyone likes stuffing and squash, but no one likes rolls or cranberry etc.; instead of forcing the making of them just skip it!
- Determine what will bring you JOY! Do you love cooking and baking? Then, by all means go for it! Yet, if you would prefer a frozen pizza or wings or a salad just do what you need to make your life happy. So many times we get wrapped up in the holidays and feel like we have to be or do or want because everyone else seems like they do, guess what? You can just do what you want and you do not have to apologize.
- Stay safe. Whatever that may mean for you and your loved ones, choose the option that makes you happy and keeps you safe! This year has been different than most, yet brought so many people closer together because they could not be together in person. Have a happy day!
Easy Dinner or Lunch Idea with Little Ones
One of my favorite dishes to cook up with a little one is turkey taco salad. There is nothing easier than using one skillet and one cutting board! This meal can be made with any meat you choose (or none if you prefer that)!
Ingredients:
1 lb ground turkey
1 head Romaine lettuce
2 tomatoes
1 onion
1 c shredded cheese
1 pepper diced
Sour cream, avocado, salsa or any other toppings of your choice
2 TB water
Taco seasoning (I prefer paleo homemade seasoning to store brand)
Directions:
- Heat turkey in skillet over medium high heat until no longer pink.
- Add taco seasoning to meat with 2 TB water and simmer until mixed together well.
- Cut all veggies to size you prefer.
- Warm tortillas or just place on bed of lettuce and top and serve!
This is a super easy and fun meal for a kiddo because I know he will eat the avocado, tomato and a tiny bit of tortilla for sure so I just prepare his while I am making mine!

Shredded Chicken Tacos
Who doesn’t love a yummy taco? In our house one of our favorite go-to foods is tacos! We have many different favorite recipes but one of the easiest is shredded chicken tacos in the Crockpot.
This recipe tastes super delicious and there is relatively no prep involved. It is a perfect meal for a quick and easy dinner. You dump all ingredients into the Crockpot, set it on low and can walk away for hours! These smell delicious while cooking and the chicken becomes very tender when simmered in the Crockpot.
A few tips:
- Get all ingredients prepped before starting to cook anything.
- Dice all your toppings so once chicken is done you can just enjoy!
- Use either meat claws or metal forks for shredding.
- If you really like your chicken in smaller bites, use a mixer to shred it into tinier pieces after cooking.
Check out the recipe below and enjoy your tasty and fresh chicken tacos!
Homemade Turkey Meatballs
I started making meatballs when we first got married a few years ago. I made meatballs with ground beef, the way I had them as a child. I thought that was the only kind of meatball that people liked.
After browsing Pinterest, I realized that there were so many other proteins that I could use to make meatballs. I read about chicken, turkey, tofu, etc. I had never cooked ground turkey but it seemed like the most tasty option.
When I finally made turkey meatballs for the first time, they turned out okay. They were pretty dry, and not very flavorful. Over time though, I have developed a recipe that I love! My husband will eat seconds of them. which is a huge deal, since he is not usually one to eat more than one helping of anything!
Ingredients:
- 1 lb ground turkey
- 2 eggs
- 1/2 cup panko breadcrumbs
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
Recipe:
- Preheat oven to 375 degrees
- In a large mixing bowl add turkey, eggs, panko and spices
- Once all ingredients are in mixing bowl, stir all ingredients together by hand
- Your meatballs should have a consistency that if you roll them into a ball they stay together and do not fall apart
- Roll meatballs into roughly an inch and a half diameter and place on a baking sheet
- Once you have all meatballs made, place in the oven for 15 minutes (some ovens make take longer to bake as well as depending on the size of your meatballs)
- Meatballs should be checked with a meat thermometer to ensure that they reach an internal temperature of 160 degrees Fahrenheit
- Allow meatballs to cool, then eat!
- If you prefer a more crispy meatball-before baking in oven heat a skillet with 1 tbsp olive oil, once heated add meatballs, turning constantly until you brown all sides. Then follow the steps above to bake them
Homemade Bread
Baking can be great fun! How exciting is it to have guests over and be able to offer your own baking? I have tried so many different bread recipes over the years and one of my favorite types has quickly become in the dutch oven.
I always wanted a dutch oven, and for my birthday I finally was gifted one! I highly recommend it! The one I chose was from Amazon, and I just love how it works, as well as the color! ( I chose the green color because it matches my teapot, but the shiny enamel on this brand looks amazing in any color!)
If you read any recipe for a dutch oven, I recommend trying it! One of my favorite recipes came from my grandma! Her recipe was for a bread maker, so I am currently trying to modify it to fit the needs to bake in a dutch oven.
If you have a favorite bread recipe share it with us! I am sure many people would love to try out a new, well recommended recipe!
